The efficient removal of free and trapped air from the product and container permits faster and deeper liquid penetration of the product. Pre-vacuumized products also have a better color retention, longer shelf life and are more uniformly processed because the same headspace is main tened in all the cans. Better processing: increased heat penetration/reduced cooking time By using the induced convection method, the Rotary Cooker/Cooler System increases the rate of heat penetration. This ensures the even cooking of every can thus reducing cooking time. Rapid heat penetration and reduced cooking time preserve the natural flavour, nutritional value and appearance of the product. Bin Dumpers empty the bins into a water-filled tank which cushions the fall of the product. An appropriate Elevator will remove the product from the water while fresh water sprays wash the product before discharge. Inspection A proper designed Sorting Belt will allow the inspection of the product before being processed. Unwholesome and immature fruits are removed at this point. Sizing and distribution Peaches are conveyed to a mechanical Sizer which eliminates the fruits too small and then separates the balance of the product into a number of different diameters accordingly to the pitting operation set-up. The different grades are discharged onto a Distributing Belt (merry-go-round) and conveyed to the Pitters. Pitting The whole peaches are delivered from the Merry-go-round to the Pitter through a feeder then transferred to the aligning section. Orientation begins immediately and continuesuntil the peach is transferred to the pitting station. At this stage the pit is oriented on the same vertical and horizontal center lines of the twist mechanism. The pit is held between two blades while a pneumatic activated diaphragm envelops each half of the fruit which rotates less than one-half turn in opposite directions (counter-twisted). Once the pitting cycle is completed the two cleanly pitted halves and the pit are discharged to a fluming system below the machines. Repitting The flume discharges the product into a Vibrating Pit Separator which allows the loose pits to fall through a perforated screen. A Cup-Up turnover orients all halves on an Inspection Belt with the pit cavity up so that fruits containing pit fragments can be removed and conveyed to FMC FoodTech’s Repitters for final pit removal. Peeling The fruit peel is removed by an FMC FoodTech’s LYE PEELER. The half fruits are oriented with the pit cavity down by a Cup Down Turnover, transferred into a chemical application section, held by steam, washed and rinsed. During this section the skin is disintegrated and washed out without harming the flesh. Size grading of halves The peeled peach halves are pumped to an FMC FoodTech’s Shaker Sizer. Perforated screens set in descending steps, separate the halves into four diameter sizes plus oversize. The four grades are conveyed to the sorting area while the oversized fruit is delivered to the Slicing Line. 1 2 3 4 5 6 7 The product is never still in the can, eliminating burning and caramelization. The FMC FoodTech’s line uses an operating principle which agitates the can, permitting short time, high temperature cooking, and rapid, efficient cooking in an automatic, continuous operation. In short: improved product quality. 15 613 2 3 Peach processing line-2004/Gb 19-08-2004 16:09 Pagina 2 (1,1) Sorting and filling Inspection of the fruit prior to filling is effected with the halves in cup-up and cup-down positions in a properly designed Sorting Belt. Inspectors sort the halves for uniform color and defects. Product suitable for canning is automatically transferred into cans by an FMC FoodTech’s Halves Filler fed through a vibrating bed. Syruping and closing The filled cans are fed into an FMC FoodTech’s Pre-Vacuumizing Syruper. The Syruper is set for a specific can size and grade of syrup. The cans and contents are completely vacuumized and then filled with syrup to a predetermined headspace. The Syruper is synchronized with a Closing machine. The Closer directs a jet steam across the top of the can to remove air from the headspace before sealing the lid onto the can. This operation provides a final vacuum in the can when the steam condenses. The closed cans now proceed to the pasteurization and cooling equipment. Pasteurization and cooling FMC FoodTech’s Continuous Rotary Cookers are extensively used for applications that require a degree of automation and high thermal efficiency. The seamed cans enter the pasteurizer through a feed device which delivers the cans to the revolving reel of the Cooker. The reel, working in conjunction with the stationary spiral, carries the cans through the cooking steam. The continuous spiralling motion through the cylinder assures even cooking for every can. At the end of the cooking process the cans are fed, via transfer mechanism, into the cooler unit where a similar process slowly cools them under pressure. Slice canning Oversized fruit from halves Size Grader or fruits which fail to make grade halves are normally destined for slicing. These halves are fed into a Cup-Down turnover, followed by a single Filling Belt and Slicer. A set of rotary knives cut the peach half into the desired number of segments. The Slices are next inspected for blemishes and other defects. Upon completion of inspection, the slices are conveyed to an FMC FoodTech’s Volumetric Filler for filling to prescribed weight. Vacuum syruping, closing, sterilizing and cooling operations are performed as described for peach halves. Syrup preparation plant Syrup is prepared in Jacketed Kettles and then transferred to the holding tank located in the upper part of the platform. The hot syrup is then conveyed by gravity to the Syrupers by means of sanitary piping connections. Packaging and wakehousing Following the sterilization process, the finished canned product may be handled in various ways. The cans may be conveyed directly to packaging lines where they are labelled, packed in fiber cartons, sealed by compression and stacked on shipping pallets. The cases can either be shipped immediately or stored in the warehouse. Alternatively, the cans may be conveyed to a palletizing machine where they are stacked in layers, unlabelled, on a warehouse pallet. This method, referred to as «bright stacking», allows the canner to delay labelling operation.
