Where did the idea for this cookbook come from? Over three years ago, we created a group on WhatsApp called BFFs. The idea of this group was to talk about the movies we were watching, to discuss our work, to ask for opinions, to check in with our friends and just to know if everything was fine. The group has only three members, but there we are free to share thoughts and ideas and to be connected with each other. During the beginning of the pandemic, we started sending pictures of the dishes we were making at home. Luciana and Patrícia are more familiar with cooking than Camila is, but to our surprise, Camila started posting some photos as well and it was then that Lu came up with the idea, “girls, let's put our recipes together in a book, a free eBook, to distribute to colleagues and friends on social media". And that idea started to take shape! We started sharing photos of all the dishes we prepared and then we selected the ones that would be part of this collection. Our intention is to present relatively simple dishes that can motivate even those who are still learning how to cook! Our book was made with a lot of love and you can follow some of our cookery confessions and also some family tips. You will notice that the book was written by three different authors, and each one of us managed to fulfill the mission given at a certain pace and with our special touch to write special recipes. There are recipes that are shown more than once because they were made in different ways by each one of us. And this is simply fascinating in the art of cooking. You will also notice that the book does not contain drinks or desserts and you may wonder: do they not know how to make those? Yes, we do! Who knows? In the future ... we may put together another book with just these two items. The cover of this book shows how many delicious things we have cooked over the past few months during the pandemic! As English language teaching professionals who are bilingual in English and Portuguese, we decided to be inclusive and include recipes in both languages to reach more friends in Brasil, the U.S., and around the world. Most of our recipes are very common in Brasil, so that is something unique about this cookbook. We hope you enjoy the dishes we made and have fun in the kitchen. Suggestions are always welcome and don’t forget to show us pictures of your dishes! Bon appétit! Lu, Paty and Cá 3 Como foi que surgiu a ideia desse livro de receitas? Há mais de três anos criamos um grupo no WhatsApp chamado BFFs! A ideia desse grupo era para que pudéssemos falar sobre os filmes que assistimos, discutir sobre nosso trabalho, pedir opiniões, desabafar ou apenas para saber se está tudo bem com cada uma de nós. É um grupo de apenas três membros, mas ali podemos dizer tudo o que pensamos, com a sinceridade e a maturidade que os anos nos permitem. Durante o começo da pandemia, começamos a colocar fotos de pratos que estávamos fazendo em casa. Luciana e Patrícia têm mais afinidade com a cozinha, mas para a surpresa dos membros do grupo, Camila começou a postar algumas fotos e foi então que a Lu comentou “meninas, vamos juntar nossas receitas em um livro, no formato PDF, para distribuirmos para os colegas e amigos nas redes sociais"? E essa ideia foi ganhando forma e começamos a postar fotos de todos os pratos que fazíamos e então começamos a selecionar os que iriam fazer parte dessa coletânea. Nossa intenção é apresentar pratos simples e que podem servir de motivação até para quem está aprendendo a cozinhar! Nosso livro foi feito com muito amor e vocês poderão acompanhar algumas de nossas confissões culinárias e também algumas dicas de família. Vocês irão perceber que o livro foi escrito a várias mãos, já que cada uma de nós conseguiu cumprir a missão dada em um determinado ritmo e com seu toque especial para escrever a própria receita. Há receitas “repetidas”, mas é porque elas foram feitas de formas diferentes, por cada uma de nós. E isso é simplesmente apaixonante na arte da culinária. Vocês também irão perceber que o livro não traz nem bebidas e nem sobremesas e talvez vocês se perguntem: será que elas não sabem fazer isso? Sim, sabemos! Mas, quem sabe…no futuro…não fazemos um outro livro só com esses dois itens? A capa desse nosso livro mesmo já dá uma pista de quanta coisa deliciosa fizemos… Esperamos que vocês aproveitem as propostas dos pratos que fizemos e que se divirtam na cozinha. Sugestões são sempre bem vindas e apareçam para contar como é que ficou o prato de vocês! Bom apetite! Lu, Paty e Cá 4 Bios Luciana C. de Oliveira – I didn’t know how to cook anything when I moved to the United States almost 24 years ago. Little by little, I learned how to make some dishes, especially with the help from her sister Lígia who has always cooked very well! Now we exchange recipes on WhatsApp. Actually, my family from my mother’s side (of Spanish descent!) has several wonderful cooks, including my aunt and Godmother Terezinha (who is not among us anymore) who always made amazing dishes!!! Two of my cousins make and sell cakes and desserts for a living. My paternal grandmother also was an amazing cook! How I miss grandma Dita’s cooking! So, cooking really is part of my DNA! I want to thank my husband who continues testing and tasting my recipes over the past 24 years! That way I have also learned to improve in the kitchen and try new dishes. When I am not cooking, I am writing, another of my passions. Professionally, I am Associate Dean for Academic Affairs and Professor in the School of Education at Virginia Commonwealth University in Richmond, Virginia. Luciana C. de Oliveira – Eu não sabia cozinhar nada quando me mudei para os Estados Unidos há quase 24 anos. Aos poucos, eu aprendi a fazer alguns pratos, principalmente com a ajuda da minha irmã Lígia que sempre soube cozinhar muito bem! Agora nós trocamos receitas por WhatsApp. Aliás, a minha família por parte de mãe (ascendência espanhola!) tem várias cozinheiras de mão cheia, inclusive minha tia e madrinha Therezinha (in memoriam), que já não está mais entre nós, fazia tantos pratos deliciosos!!! Duas primas fazem bolos e doces para vender. Minha avó paterna também era uma cozinheira e tanto. Que saudades dos pratos da vó Dita (in memoriam)! Então, está mesmo no meu DNA!! Na parte profissional, eu sou Vice-Diretora de Assuntos Acadêmicos e Professora Titular na Escola de Educação da Virginia Commonwealth University em Richmond, Virginia, Estados Unidos. 5 Patrícia de Oliveira Lucas – I am of Italian descent and got interested in cooking with my Nonna Páscoa. Since I was a little girl, I have always liked to be near the stove and asked for the wooden spoon to try what Nonna was cooking, always under the supervision of my Nonno Toninho. In adolescence and adulthood, I took some gastronomy courses on how to make easter eggs, cakes, pies and sweets for parties. Sweet dishes have always been my favorite, since the art of confectionery requires creativity and that entices me. During my undergraduate years, I was the official cook of the house and my most typical dish, which is still remembered by the girls of the sorority today, is the famous “strogonoff (beef and cream) with wine”. I am also grateful to my friend Rosângela who taught me delicious tricks and recipes. Cooking has always been an immense pleasure and never an obligation, as I cook for love and put all my heart there. I am very grateful to my parents (Cidinho e Eugênia) for all the opportunities they gave me in life and also for being my beloved guinea pigs when we met andI wanted to try new recipes. Outside the kitchen and away from my cookware and cooking utensils, I am an associate professor in the Dept of Foreign Languages at the Federal University of Piauí, where I currently work as coordinator. Patrícia de Oliveira Lucas – Eu tenho ascendência italiana e tomei gosto pela cozinha com a minha Nona Páscoa (in memoriam). Desde pequenininha sempre gostei de ficar perto do fogão e pedia a colher de pau para experimentar o que a Nona estava cozinhando, sempre sob a supervisão do meu Nono Toninho (in memoriam). Na adolescência e idade adulta fiz alguns cursos na área de gastronomia: ovo de páscoa, bolos, tortas e docinhos para festas. Os pratos doces sempre foram meus preferidos, pois a arte da confeitaria exige criatividade e isso me encanta. Na graduação, eu era a cozinheira oficial da casa e meu prato mais típico e que até hoje é lembrado pelas meninas da república é o famoso “strogonoff com vinho”. Sou grata ainda à amiga Rosângela que me ensinou truques e receitas deliciosas, que faço até hoje. Para mim, cozinhar sempre foi um imenso prazer e nunca uma obrigação, pois cozinho por Amor e coloco ali todo seu coração. Fora da cozinha e longe das minhas panelas e utensílios culinários, sou Profa Dra Adjunta no Departamento de Letras Estrangeiras da Universidade Federal do Piauí, onde atualmente exerço a função de Coordenadora do Curso de Letras Estrangeiras. 6 Camila Höfling – I come from a matriarchal family, growing up among women with strong personalities, especially my mother Luciana and my grandmother Creusa (in memoriam). Besides their professional careers (which inspired me), they are excellent cooks. There is an internal joke in the family (which is true) that spaghetti with tomato sauce is prepared and eaten only at home. Anyone that has tasted my grandma’s tomato sauce has never again eaten pasta out. Despite my German last name (Höfling from my father’s family), I am also an Italian descendent (the Giovanni, Mileo and Spedo, let alone the Camargo Neves), so my family takes food seriously and family meetings are almost always in the kitchen. Because of my professional life, I’ve learned the basics with them and just cooked when I had time to spare (always with my husband’s compliments). Through the pandemic, home office forced me to share domestic work with my husband and cooking was my responsibility. To my great surprise, I’ve caught myself enjoying cooking, taking photos of dishes, sharing them with Lu and Paty. My kitchen has become my moment away from the computer, the meeting link, the virtual classroom, where I could experience seasonings, read recipes and be proud of my dishes. Professionally, I hold a PhD in Linguistics, and have been an associate professor and researcher at the Federal University of São Carlos for 12 years, having served as Head of International Affairs in the past, as well as the undergraduate program coordinator, among other duties. Camila Höfling – Venho de uma família matriarcal, cresci entre mulheres de personalidade forte, entre elas minha mãe Luciana e minha avó materna Creusa (in memoriam). Além do lado profissional dessas mulheres incríveis (que me inspiraram), elas são excelentes cozinheiras. Brincamos na família (piada interna, com um fundo de verdade) que macarrão ao sugo só se come em casa. Quem experimentou o molho de macarrão da minha avó nunca mais comeu massa fora de casa. Apesar do sobrenome alemão (Höfling), tenho ¾ de sangue italiano (os Giovanni, os Mileo e os Spedo, sem falar nos Camargo Neves), então já sabem que comida é coisa séria na família e todas as reuniões são praticamente na cozinha. Enfim, por conta da vida profissional corrida, aprendi o básico com elas e me virava na cozinha quando tinha um tempo (sempre com elogios do ‘meu bem’ – meu marido Alessandro). Com a pandemia, o home office me obrigou a dividir tarefas domésticas com ele e cozinhar foi atribuída a mim. Qual não foi minha surpresa quando me peguei sentindo prazer em cozinhar, tirando fotos dos pratos, compartilhando com a Lu e a Paty. A cozinha se transformou no meu momento longe do computador, do link da reunião, da sala de aula virtual, experimentando temperos, lendo receitas e me orgulhando dos pratos. Na vida profissional, sou professora e pesquisadora na Universidade Federal de São Carlos, doutora em Linguística. Mix in onion, cilantro, and tomatoes. Refrigerate 1 hour before serving. Serve with tortilla chips. Ingredientes 3 abacates pequenos - descascar, cortar e amassar (como se fosse um purê) 2 tomates médios ½ cebola (cortada em pedacinhos pequenos) Suco de 1 limão Sal a gosto Coentro fresco (de preferência), mas pode ser desidratado também Modo de preparo Em uma tigela média, misture os abacates, o suco do limão e o sal. Adicione e junte a cebola, o coentro e os tomates. Resfriar por 1 hora antes de servir, com as tortilhas. Observações No Brasil, se não achar as tortillas, geralmente compra-se Doritos®. 10 Baby Potatoes (Batatas em Conserva) Ingredients 2 lbs baby potatoes 1 medium onion, diced 2 garlic cloves ½ cup olive oil Salt, oregano, ground black pepper, and parsley to taste 1 cup black or green olives Directions Boil the unpeeled potatoes for 20 minutes, until cooked through. While they boil, mix the onion, garlic, olive oil, and a little salt, until you get a homogenous mix. Drain the potatoes and add the mix, oregano, pepper, and salt. Blend well. Let it cool down and place in a container and close it fully. Place in the refrigerator for at least 5 days before serving. Add olive oil if the potatoes get too dry. Ingredientes 1 kg de batata bolinha (ou pirulito) 1 cebola média picada 2 dentes de alho ½ xícara (chá) de azeite Sal, orégano, pimenta do reino e cheiro verde a gosto 1 xícara (chá) de azeitonas pretas ou verdes Modo de Preparo Cozinhe as batatas com a casca por cerca de 20 min (ou até ficarem macias). Enquanto isso, bata no mixer a cebola, o alho, o azeite e uma pitada de sal, até obter uma pasta. Escorra a batata e com ela ainda quente, adicione o tempero batido, as azeitonas, o orégano, a pimenta e sal. Mexa bem. Deixe esfriar, ponha em um recipiente bem fechado e armazene na geladeira por até cinco dias, antes de consumir. Observações Caso a pasta fique muito seca, adicione azeite para deixá-la mais líquida. A foto da esquerda é da Camila e a da direita é da Patrícia. Uma das diferenças é que na da Camila vai azeitona e na da Patrícia não! 11 Meat Croquettes (Croquetes de Carne) Ingredients 1 lb potatoes (boiled and mashed) ½ lb ground beef (seasoned) 1 egg 1 ½ tbsp breadcrumbs Salt, parsley, green onions, and ground black pepper to taste For the batter 1 egg beaten with 1 tbsp milk, breadcrumbs,and flour Oil to fry Directions In a large bowl, put the mashed potatoes, add the ground beef and egg. Mix well. Add the remaining ingredients and mix everything together. With a large spoon, and see if you can make a croquette that doesn’t fall apart - the croquette needs to stick together. If it’s too soft, add a little more breadcrumbs. Make the croquettes by hand and dip them into the batter mix. In a large frying pan, add the oil on high heat. When the oil is heated through and ready for frying, add the croquettes one by one to fry. Turn them once or twice to fry all sides. Remove them from the frying pan and add to a plate lined with a paper towel to absorb a little of the excess oil. Ingredientes ½ kg de batata cozida e amassada (sem pedacinhos) 300g de carne moída ou desfiada já temperada 1 ovo 1 ½ colher (sopa) de farinha de rosca Sal, salsinha, cebolinha e pimenta moída a gosto Para empanar 1 ovo batido com 1 colher (sopa) de creme de leite, 3 colheres (sopa) de farinha de trigo e 3 colheres (sopa) de farinha de rosca Óleo para fritar 12 Modo de Preparo Em uma vasilha, coloque a batata já cozida e amassada, acrescente a carne e o ovo. Mexa bem. Coloque a farinha de rosca e os outros ingredientes. Mexa mais uma vez, para misturar tudo. Com o auxílio de uma colher, pegue um pouco da massa e veja se consegue dar forma ao croquete. Se estiver mole, coloque mais um pouco de farinha de rosca. Enrole os croquetes, passando-os pela mistura de ovo com creme de leite, trigo e por fim na farinha de rosca. Leve uma panela ao fogo com óleo e espere ficar bem quente. Coloque os croquetes um a um para fritar. Vire-os assim que dourarem, deixe dourar do outro lado, retirando-os e colocando-os em um papel toalha para absorver um pouco da gordura. Observações É importante que a batata esteja bem lisinha, para que seu croquete fique bem saboroso. O mesmo tem que acontecer com a carne. Se for escolher a desfiada, lembre-se de comprar uma carne que possa ser fácil de ser desfiada, sem ficar com pedaços grandes. Por isso muitas pessoas preferem usar a carne moída. Você também pode congelar os croquetes, depois de empanados, se não for consumir todos de uma vez! Para fazer essa receita e a do risoles, que também tá no livro, a Paty recebeu orientações de uma grande amiga e uma das pessoas que a ensinou muito do que sabe sobre a arte de cozinhar: Rosângela Nascimento! Obrigada! 13 Cheese Rissoles (Risoles de Queijo) Ingredients Dough 1 cup flour 1 cup milk 1 and ½ tbsp butter ½ tsp salt Ground black pepper to taste (optional) Filling 1 cup of shredded mozzarella cheese Oregano For the batter ½ cup milk ½ cup breadcrumbs Directions In a pan in medium heat, add the milk, butter, and salt (and pepper, if desired). When the mixture starts to boil, add the flour and stir constantly. You will see a kind of dough forming. Turn off the fire and transfer the dough to a clean dish. With your hands, mix well. Reserve. With a roller, roll the dough on a lightly floured surface into a 4-inch circle. Continue with remaining dough, stacking the circles of dough as you go. Add about 1 tbsp mozzarella in the middle of each circle and fold in half to close. Seal edges firmly. Dip (lightly) each pastry into the milk and then the breadcrumbs. In a large frying pan, add the oil in high heat. When the oil is heated through and ready for frying, add the rissoles one by one to fry until golden brown (as in picture). Remove them from the frying pan and add to a plate lined with a paper towel to absorb a little of the excess oil. Serve warm. 14 Notes: If you’re not going to fry the risoles as soon as you make them, leave them in the fridge. But sometimes the filling gets cold. So, here is a tip: before you fry them, take them out of the fridge and place them in the microwave for about 20-30 seconds. This helps warm the ricoles and the cheese melts more easily! If you don’t have a microwave, just place in the oven for bout 2 minutes. Fry them right after. Ingredientes Massa 1 copo (do tipo de requeijão) de trigo 1 copo (do tipo de requeijão) de leite 1 ½ colher (sopa) de manteiga 1 colher (sobremesa) de sal Pimenta preta moída a gosto (opcional) Recheio 12 cubinhos de muçarela, temperados com orégano (calcular uma peça única de muçarela, cerca de 200g) Para empanar 1 xícara (chá) de leite 6 colheres (sopa) de farinha de rosca Óleo para fritar Modo de Preparo Em uma panela, leve o leite e a manteiga, junto com o sal ao fogo. Se desejar, coloque um pouco de pimenta moída. Quando o leite e a manteiga começarem a levantar fervura, adicione o trigo e mexa, sem parar. Uma massa meio irregular vai se formar. Desligue o fogo e transfira essa massa para uma bancada limpa. Com as mãos, vá mexendo essa massa, até deixá-la uniforme. Reserve. Com o auxílio de um rolinho, vá abrindo a massa. Coloque um cubo de muçarela no meio do recheio e feche. Use a boca de um copo para cortar o formato meia lua do risoles. Passe-os pelo leite e empane com a farinha de rosca. Coloque o óleo em uma panela e vá fritando os risoles quando o óleo estiver bem quente. Retire-os do óleo e coloque-os em um papel toalha, para escorrer o excesso de gordura. Observações Se não for fritar os risoles assim que os fizer, coloque-os na geladeira. Mas, às vezes, o recheio fica gelado. Então, vai aqui uma dica. Antes de fritá-los, retire-os da geladeira, e coloque-os de 20 a 30 segundos no microondas. Isso ajuda a esquentar um pouco os risoles e o queijo ficará bem derretido! Se você não tem microondas, aqueça um pouco o forno e desligue. Coloque os risoles numa bandeja e deixe-os no calor do forno, por cerca de 2 minutos. Frite- os na sequência. 15 Sweet Potato Chips (Chips de Batata Doce) Ingredients 2 sweet potatoes 4 tbsp breadcrumbs ½ cup Parmesan cheese 1 tsp olive oil (to sprinkle) Salt and ground black pepper to taste Directions Cut the sweet potatoes in thin slices. In a medium bowl, add the remaining ingredients. Add olive oil. Place in Airfryer® (or similar) - make sure you even out the slices - and program it for 10 min at 360F. Open carefully and turn the slices. Program for another 10 min at 360F. Remove when finished. Ingredientes 2 batatas doces médias 4 colheres (sopa) de farinha de rosca Parmesão ralado Azeite (para regar a batata doce) Sal e pimenta do reino a gosto Modo de Preparo Fatiar a batata doce em rodelas finas. Numa tigela, colocar todos os ingredientes e misturar bem. No final, regue com azeite. Coloque no recipiente da Airfryer® (espalhe bem as rodelas) e programe 10 minutos a 200oC. Abra a Airfryer® e com cuidado vire as rodelas e programe para mais 10 minutos a 200oC. Observações A Cá prefere cortar as batatas de forma irregular, mas tentando deixá-las bem finas para ficarem bem crocantes. 16 BREAKFAST CAFÉ DA MANHÃ 17 Egg Casserole 1 (Omelete de Forno 1) Ingredients 8 eggs 1/2 onion 1 yellow pepper (or orange or red) 1 cup ham 1 cup cheese (any one you like) 1/2 cup feta cheese Salt to taste Directions 1st step: cut onion slices in a small container with olive oil and microwave for 1 min 30 sec. Mix all ingredients (except eggs) and place in an oven-safe dish. In another bowl, whisk 8 eggs (Lu did this in 2 parts, 4 eggs each time). Pour on top of the other mixture. Bake in preheated oven at 350F for 35 min. Ingredientes 8 ovos ½ cebola (em fatias) 1 pimentão amarelo (ou vermelho ou verde) 1 xícara (chá) presunto 1 xícara (chá) de queijo (de sua preferência) ½ xícara (chá) de queijo ‘feta’ Sal a gosto Modo de preparo Primeiro passo: corte a cebola em fatias e coloque-as em uma tigela pequena com azeite, e aqueça no microondas por 1 min e 30 seg. Misture todos os ingredientes e coloque em um refratárioque possa ir ao forno. Segundo passo: em outra tigela, bata 8 ovos com um garfo ou fouet (Lu fez em 2 partes, 4 ovos por vez). Despeje em cima da outra mistura. Assar por 35 min em forno pré-aquecido a 180℃. 18 Egg Casserole 2 (Omelete de Forno 2) Ingredients 8 eggs 1/2 onion (diced) 3 medium tomatoes (diced) 1 cup ham 1 cup cheese (any one you like; I used Havarti) Salt to taste Directions 1st step: put onion slices and tomato slices in a small container with olive oil and microwave for 1 min 30 sec. Mix all ingredients (except eggs) and place in an oven-safe dish. In another bowl, whisk 8 eggs (Lu did this in 2 parts, 4 eggs each time). Pour on top of the other mixture. Bake in preheated oven at 350F for 35 min. Ingredientes 8 ovos ½ cebola (em cubos) 3 tomates médios (em cubos) 1 xícara (chá) de presunto 1 xícara (chá) de queijo (de sua preferência) Sal a gosto Modo de preparo Primeiro passo: coloque a cebola e os tomates em uma tigela pequena com azeite e aqueça no microondas por 1 min e 30 seg. Misture todos os ingredientes e coloque em um refratário que possa ir ao forno. Segundo passo: em outra tigela, bata 8 ovos com um garfo ou fouet (Lu fez em 2 partes, 4 ovos por vez). Despeje em cima da outra mistura. Assar por 35 min em um forno pré-aquecido a 180℃. 19 Greek Omelet (Omelete Grego) Ingredients 2 eggs ¼ tomato (diced) 1 tbsp feta cheese 1 tsp Kalamata olives (diced in small pieces) 1 tbsp olive oil Directions In a medium bowl, beat eggs until no whites remain, then season with salt. In a medium skillet, heat olive oil. Pour in eggs and cover. Let cook for about 2 min. Once the bottom looks done but top is still a little wet, add feta cheese, then diced tomatoes and lastly Kalamata olives. Cover. Cook for 2-3 min. Fold and serve. Ingredientes 2 ovos ¼ tomate (cortado em cubos) 1 colher (sopa) de queijo feta 1 colher (chá) de azeitonas Kalamata (ou preta) (picadas em pedaços pequenos) 1 colher (sopa) de azeite Modo de preparo Em uma tigela média, bata os ovos até obter uma massa uniforme, e então tempere com sal. Dobre e sirva. 20 Huevos a La Mexicana (Mexican-style Eggs) (Huevos a La Mexicana - Ovos Mexicanos) Ingredients ½ onion 1 medium tomato 4 eggs 1 tbsp olive oil 1 tbsp reduced fat milk (Lu used Lactaid®) Salt and pepper to taste Directions Dice the onion and tomatoes in small pieces. In a separate bowl, break the eggs and add a tablespoon of milk, some salt and pepper. Use a fork or whisk to beat the eggs for 30-60 seconds, making sure the eggs are mixed well. Heat olive oil in a large skillet on medium heat. Add the onions and brown them for 2-3 minutes. Add the diced tomatoes and let them cook for a few minutes. Lastly, add the eggs and cover. Let them cook until eggs look done. Do not overcook! Notes In the original recipe for these eggs, you need to have jalapenos but Lu and Alex think it’s too spicy. But if you like spicy food, you can add ½ jalapeno pepper. Lu likes to serve these eggs with tortillas (pictured), but they are good on their own. Lu gosta de servir esses ovos com tortillas (vide foto), mas ficam bons sozinhos também. 22 BREADS PÃES 23 Garlic Bread (Pão de Alho) Ingredients 3 rolls/loaves bread 3 tbsp light mayonnaise 2 tbsp table cream 1 tbsp Minas cheese ½ tsp chopped parsley ¼ tsp thyme Salt and pepper to taste Directions In a bowl, mix all the ingredients to form a paste. Cut each loaf as if you were going to slice it, but do not separate the slices. Spread the paste between each slice and over the bread as well. Finish by sprinkling Parmesan cheese. Bake in preheated oven at 350F for 15 min. Notes In case you don't have table cream, you can use ricotta cheese or cream cheese. You can use mozzarella or Havarti cheese or any other cheese you like instead of Minas cheese which is very specific to Brasil! If you don't have thyme, you can use any other herb of your choice. The bread used can be stale. And, you can also freeze it! To do this, wrap each loaf in plastic wrap and place in the freezer. Take it from the freezer about 1 hour before baking. Se não tiver tomilho, pode usar qualquer outra erva de sua preferência. O pão utilizado pode ser o amanhecido. E você também pode congelar! Para isso, envolva cada um dos pães em filme plástico e leve ao congelador. Retire cerca de 1 hora antes de levar ao forno. 24 Cheesebread (Pão de Queijo) Ingredients 1 cup sweet manioc starch (cassava starch) ½ tsp (shallow) salt 100ml (3.4oz) milk 50ml (1.7oz) oil 1 egg 1 ½ cups grated Minas cheese (or light cheddar) Directions In a saucepan, mix the milk and the oil and boil. Put aside. In a bowl, place the sweet manioc starch and add the salt, pour the contents of the pan into this mixture and stir until the ingredients are incorporated. Add the egg and mix with the aid of a spoon. Add the grated cheese and mix again. With a spoon, shape the buns to the size you want. Place in a preheated oven at 350F for about 25 min. Notes One of the most delicious types of cheese for this recipe is semi-cured cheese, but it's not easy to find. The important thing is that you use firm cheese. If you prefer, you can increase the amount of ingredients and freeze! Leve ao forno pré-aquecido a 180oC, por cerca de 25 min. 25 Parmesan Twists (Palito de Parmesão Torcido) Ingredients 1 box semi-laminated puff pastry 1 beaten egg Grated Parmesan to taste Chia seeds for sprinkling Directions Grease a baking sheet with a little butter and set aside. Roll out the dough to make it thin. Then, spread the egg yolk inside the open dough and sprinkle the grated Parmesan cheese. Fold the dough and with the help of a knife, cut the dough into strips. Hold the end of both ends and twist the stick. Place on a baking sheet. Brush again some more of the yolk and sprinkle the chia seeds. Place in a preheated oven at 350F for about 20 minutes. Notes You can use another type of seed if you don't like chia. If you prefer, you can use any herbs of your choice. Se preferir, pode usar alguma erva de sua preferência. 26 Homemade Bread (Pão Caseiro) Ingredients 2 eggs 1 garlic clove or half onion 1 cup water ½ cup olive oil Seasoning to taste (oregano, saffron, parsley, etc) 2 cups flour 1 tbsp baking powder Directions Beat the eggs, garlic or onion, water and olive oil in a blender for some minutes. Add the seasoning and beat again. Place the dough in a large bowl and add the flour. If the dough is still too liquid, add some more flour. It must have the same consistency of a cake dough. Add the baking powder last and mix. Place the dough in a well- greased loaf pan and bake in preheated oven at 350F for 45 min. Notes This is Ligia’s recipe, Lu’s sister. This dough is similar to cake dough - that’s why it’s so easy to make. Cá’s bread (second photo) didn’t rise because she used integral wheat flour, using the same proportions of the original recipe. Despejar em forma untada e levar para assar em forno pré-aquecido a 180oC por 45 min. Observações Esse pão é feito como se faz bolo e é receita da Lígia, irmã da Lu. O pão da Cá (segunda foto) não cresceu porque ela usou farinha de trigo integral usando as mesmas medidas da receita original. Deveria ter modificado a receita! 28 SOUPS SOPAS 29 Bean Soup (Caldinho de Feijão) Ingredients 2 cups black bean broth 2 tbsp diced bacon 1 tbsp olive oil 6 boiled quail eggs (or 2 regular eggs) 1 unit thin sausage ¼ tsp crushed garlic Salt, ground pepper, parsley and chives to taste Directions In a saucepan, put the oil, garlic, salt and pepper. Then add the bacon and let it fry until the bacon reduces in size and looks crunchy. Then add the sausage, which must be finely chopped and fry some more. Add the black bean broth and turn the heat down. When it starts to thicken, add the eggs, parsley and chives. (To make the black bean broth, blend the beans with a little water in a blender). Notes: To make the bean broth, blend the cooked beans in the blender or mixer, with a little water (the water you use for cooking the beans). If you’d like a thicker broth, add less water. Then, strain the beans. It is important that you not season the beans to make the broth. É muito importante que o feijão não esteja temperado para fazer o caldinho. 30 Vegetable Soup with Meat (Sopa de Legumes com Carne) Ingredients 300g (10.5 oz) diced beef 2 diced small potatoes 1 diced chayote 1 diced carrot 3 diced skinless and seedless tomatoes 2 tbsp ketchup 1 tbsp olive oil ½ cup noodles for soup Salt and pepper to taste Directions In the pressure cooker, add the oil, salt and ground pepper and let it warm up for about 30 seconds. Place the meat to seal. When you notice that the meat has changed color, add the tomato and ketchup and stir a little more. Pour a little water and boil. When it boils, add more water (about 1.5 inches of water above the meat). Put the lid on and heat through to get pressure. When you get pressure, lower the heat and leave it for 20 minutes. Open the pan and add the vegetables. At this point, it is good to check the salt. Add more salt if needed. If it is too salty, add a little more water. Put the lid on again and leave for another 5 minutes under pressure. Open the pan again and put the pasta. Put the lid on and leave for another 3 minutes under pressure. Coloque a carne, para dar uma leve "selada". Quando perceber que a carne mudou de cor, acrescente o tomate e o ketchup e mexa mais um pouco. Coloque um pouquinho deágua e deixe levantar fervura. Quando levantar fervura, acrescente mais água (o suficiente para ter uns 3 dedos de água acima da carne). Tampe a panela e leve ao fogo para pegar pressão. Quando pegar pressão, abaixe o fogo e deixe cozinhar por 20 min. Saindo a pressão, abra a panela e acrescente os legumes. Nesse momento é bom verificar o sal e, se for preciso, você pode corrigir. Se for para mais, acrescente sal, se for para menos, adicione um pouco mais de água. Tampe a panela novamente e, ao pegar pressão, deixe por mais 5 min. Quando a pressão tiver saído, abra a panela novamente e coloque o macarrão. Tampe a panela e deixe pegar pressão. Quando pegar pressão, deixe por mais 3 min. Desligue. Espere a pressão sair e sirva. Observações Caso encontre, um legume que fica muito gostoso nessa sopa é a mandioquinha! Uma unidade pequena, em cubos, vai deixar esse prato ainda mais gostoso. Caso não encontre tomates frescos, você pode usar meia lata de tomate pelado. Fica muito bom também! Se você não tem tanto conhecimento de carne, peça ajuda ao comprar. Informe que necessita de carne para fazer sopa e peça para cortá-la em cubos. Lembre-se de não lavar o macarrão para colocá-lo na sopa. 32 Tomato Soup (Sopa de Tomate) Ingredients 1 onion (diced in small pieces) 5 medium tomatoes (diced in small pieces; no need to seed, skin or remove the core!) 1 cup vegetable broth 10 large basil leaves 1 tsp olive oil Salt or garlic salt, lemon pepper, and dry cilantro to taste Directions Add diced onions, diced tomatoes, and olive oil to a large microwavable bowl (pictured). Heat in the microwave for 5 min. Stir. Add vegetable broth. Heat for 5 minutes until it boils (watch the microwave so it doesn’t spill!) Notes Lu doesn’t use a mixer, even though that is very common for tomato soups. Lu and her husband Alex like to eat the cooked tomato chunks! (Fique de olho no microondas para que a mistura não comece a derramar). Observações Lu não usou um mixer, mesmo sendo esse o procedimento mais comum para sopa de tomate. No caso, Lu e Alex preferem comer a sopa com os pedaços de tomate. 33 Tortilla Soup (Sopa de Tortilha) The tomato soup from yesterday becomes the tortilla soup of today! A sopa de tomate do dia anterior pode virar a sopa de tortilha de hoje! Ingredients Leftover tomato soup 1 small can corn ½ can black beans ½ avocado Directions Use the leftover tomato soup, add 1 can corn and ½ can of black beans. Microwave for 5 min until all blended. Serve with sliced avocado and tortilla chips (of your choice). Ingredientes Sobra da sopa de tomate 1 lata pequena de milho verde ½ lata de feijão preto (já cozido) ½ abacate Modo de Preparo Use a sobra da sopa de tomate, adicione a lata de milho e a ½ lata de feijão. Sirva com pedaços de abacate e chips de tortilha (de sua preferência). 34 Pumpkin Cream with Cheese (Creme de Abóbora com Queijo) Ingredients A piece of pumpkin of your choice (about 9oz), already washed and preferably peeled Water to cover the pumpkin (about 34oz for that amount of pumpkin, about an inch above) Salt, olive oil and ground pepper to taste Ground Parmesan cheese and fresh mozzarella cheese to taste Directions Place the piece of pumpkin in a pressure cooker with the water. Put the lid on. When it gets pressure, let it cook for about 10 minutes. Let the pressure come out naturally. Open the pan and check if the pumpkin is soft. Transfer the pumpkin, along with the water to the blender and blend it for about 2 minutes until it is very smooth. In a saucepan, add the oil, salt and pepper and pour the contents of the blender. Turn the heat to low, and let the cream thicken for about 5 minutes. Make sure the salt is good. Add the broth to a container and sprinkle with grated Parmesan and pieces of mozzarella cheese. Notes This cream is also very good with peas. And, if you prefer, you can use other types of cheese. Chopped parsley and some croutons can also be added to your plate. 35 Ingredientes Um pedaço de abóbora de sua preferência (cerca de 250g), já lavada e de preferência sem casca Água para cobrir a abóbora (cerca de 1 litro para essa quantidade de abóbora, passando cerca de 2 dedos) Sal, azeite e pimenta moída a gosto Queijo parmesão e muçarela de búfala a gosto Modo de Preparo Leve o pedaço de abóbora para a panela de pressão, com a quantidade de água indicada nos ingredientes. Tampe a panela. Quando pegar pressão, deixe cozinhar por cerca de 10 min. Deixe a pressão sair naturalmente. Abra a panela e verifique se a abóbora está mole. Transfira a abóbora, juntamente com a água para o copo do liquidificador e bata por cerca de 2 min, até ficar bem homogêneo. Desligue. Em uma panela, coloque o azeite, o sal e a pimenta e despeje o conteúdo do liquidificador. Ligue o fogo baixo, e deixe o creme engrossar por cerca de 5 min. Verifique se está bom de sal. Desligue. Coloque o caldo em um recipiente e polvilhe com parmesão e com pedacinhos de muçarela de búfala. Observações Esse creme também fica muito bom com ervilha partida. E, se preferir, pode usar outros queijos que sejam de sua preferência. Salsinha picadinha, para quem gosta e uns pedacinhos de crouton também podem ser adicionados a seu prato. 36 VEGETABLES LEGUMES 37 Zucchini with Parmesan Cheese (Abobrinha com Parmesão) Ingredients 1 medium-sized zucchini Juice of 1 medium-sized lime 4 tbsp olive oil Parmesan slices Salt, parsley and black pepper to taste Nutmeg (optional) Directions Wash the zucchini thoroughly, cutting off the ends. With the help of a vegetable peeler, slice and set aside. Take the piece of Parmesan and make slices with it. In a dish, add the zucchini in layers, sprinkle with salt, pepper, parsley, and nutmeg (optional). Add the Parmesan and the oil. Make sure that the last layer is the Parmesan, the oil, and the parsley. Notes For this salad, Paty doesn't use the seeds. To make the slice with the Parmesan, if you don't have your own utensil, you can use your own vegetable peeler or a knife. The difference is that the slice can get thicker and they can break, but it does not interfere with the taste. 38 Ingredientes 1 abobrinha média (de preferência, que tenha pescoço longo) Suco de 1 limão médio 4 colheres (sopa) de azeite Parmesão em pedaço para fazer as lascas Sal, salsinha e pimenta do reino a gosto Noz moscada (opcional) Modo de Preparo Lave bem a abobrinha, cortando a ponta e a cabeça, deixando apenas o pescoço. Com o auxílio de um descascador de legumes, vá fazendo lâminas e reserve. Pegue o pedaço de parmesão e faça lascas com ele. Em um prato faça camadas de abobrinha, regue com sal, pimenta, noz moscada, salsinha, parmesão e a colher de azeite. Faça isso até utilizar todos os ingredientes. É interessante que na última camada fique o parmesão, o azeite e a salsinha. Observações Para essa salada, a Paty não utiliza a parte das sementes. Por isso a sugestão de que você compre uma que tenha um pescoço longo. Para fazer as lascas com o parmesão, caso você não tenha um utensílio próprio, pode usar o próprio descascador de legumesou uma faca. A diferença é que as lascas podem ficar mais grossas e elas podem quebrar, mas isso não interfere no sabor. 39 Mashed Potatoes with Ricotta Cheese (Purê de Batata com Creme de Ricota) Ingredients 6 medium-sized peeled potatoes 1 tbsp butter 4 tbsp ricotta cheese Salt, ground pepper and parsley to taste Fresh mozzarella cheese and cherry tomatoes to garnish Parmesan or grated semi-cured cheese to taste (optional) Directions Place the potatoes with enough water to cover them in a pressure cooker. Add a tablespoon of salt and cover. Leave it under pressure for 5 minutes. When the pressure is off, take the potatoes out, placing them in the bowl of an electric mixer, mash them until there are no more lumps. Add the butter, the ricotta cream and salt. It really works and is delicious! However, if you notice that your mashed potatoes have gotten a little dry and you wanted it moister, you can add an extra spoonful of the ricotta cheese. 40 Ingredientes 6 batatas médias descascadas 1 colher rasa (sopa) de manteiga 4 colheres (sopa) de creme de ricota Sal, pimenta moída e salsinha a gosto Muçarela de búfala e tomate cereja para decorar Parmesão ou queijo meia cura ralado a gosto (opcional) Modo de Preparo Leve as batatas com água suficiente para cobri-las e coloque-as em uma panela de pressão. Adicione uma colher (sopa) de sal e tampe. Quando pegar pressão, deixe por 5 min e desligue. Ao sair a pressão, retire as batatas, colocando-as na tigela da batedeira, amasse-as até que não fiquem pedaços. Coloque a manteiga, as colheres de creme de ricota e o sal. Coloque os garfos da batedeira para funcionar e vá batendo o purê como se estivesse batendo uma massa de bolo. Faça isso por cerca de 2 min. Desligue a batedeira, transfira o purê para uma panela. Acrescente a salsinha e o queijo ralado, se desejar. Mexa por cerca de 1 min. Transfira para um recipiente e decore com os tomatinhos cereja e a muçarela de búfala. Observações A dica da batedeira é para que você tenha um purê lisinho, sem qualquer pedacinho. Funciona mesmo e fica uma delícia! Todavia, se perceber que seu purê ficou um pouco seco e caso você o queria mais molhadinho, acrescente uma colher a mais do creme de ricota. 41 Zucchini Chips (Chips de Abobrinha) Ingredients 2 medium-sized zucchinis 4 tbsp breadcrumbs Grated Parmesan cheese Olive oil (for the zucchini) Salt and black pepper to taste Directions Slice the zucchinis very finely. In a bowl, place all the ingredients and mix well. At the end, drizzle with olive oil. Place in the Airfryer® container (spread the slices well) and program for 10 minutes at 360F. Open, carefully turn the slices and set for another 10 minutes at 360F. Notes: The picture on the left is Paty’s and the one on the right is Ca’s! The difference is that Paty makes her zucchini in the oven bc she doesn’t have an Airfryer®. She uses a silicone dish, oven temperature at 360F, for about 20 minutes. Bon appétit! 44 Zucchini Filled with Rice and Ground Beef (Abobrinha Recheada com Arroz e Carne Moída) Ingredients 5 medium-sized zucchinis 2 garlic cloves 1 onion 1 tomato 2 tbsp soy sauce Parsley, chives and salt to taste 2 cups cooked rice, seasoned and ready 1 pound seasoned raw ground beef Seasonings (for rice and meat) to taste Directions Wash and dry the zucchinis well. Coloque 1 xícara de água na panela para as abobrinhas não queimarem no fundo. A Cá usa o miolo da abobrinha para fazer um suflê de abobrinha divino, que aprendeu com a mãe dela, Luciana. 46 Ratatouille (Caponata de Berinjela) Ingredients 1 medium-sized eggplant 1 medium-sized green pepper 1 medium-sized yellow pepper 1 medium-sized red pepper 6 tbsp sliced olives 2 medium-sized sliced onions Thyme, oregano and parsley (or any other herbs of your choice) Olive oil to line the pan and to drizzle the vegetables Salt and black pepper to taste 2 tbsp of balsamic vinegar (optional) Directions With the help of a mandoline slicer, slice the ingredients vertically. Put aside. Line a rectangular baking dish with plenty of oil and place half of the sliced onions, herbs of your choice, salt and vinegar (optional). Add the peppers, the eggplant and the sliced olive. Add the other half of the onions, sprinkle again with plenty of oil and add herbs, salt and balsamic vinegar (optional). With the aid of a fork, stir these ingredients to mix them. Line the baking sheet with aluminum foil and set aside for about 5 minutes. Preheat the oven to 400F for about 5 minutes. Abaixe para 180oC e leve a assadeira envolta em papel alumínio ao forno, por cerca de 25 min. Retire a assadeira do forno, remova o papel alumínio de cima e volte ao forno por mais 20 min. Desligue e sirva. Observações Como a berinjela tem a tendência de escurecer, Paty deixa para fatiá-la por último. Assim, não precisa deixar de molho. E, para que essa receita fique bem gostosa, é preciso ser generosa(o) no uso do azeite. Você pode guardar em geladeira e consumir como um antepasto. Fica a dica! Muito obrigada!!! 48 Red Peppers with Blue Cheese and Meat (Pimentão com Gorgonzola e Carne de Sol) Ingredients 2 round red peppers (must be round so it can stand) 300g (1 and ¼ cups) jerked beef/sun-dried beef 2 tbsp gorgonzola cheese 4 tbsp ricotta cheese 2 tbsp whole milk 2 tbsp table cream Salt and pepper to taste Olive oil to seal and sauté the shredded meat Directions for the pepper Cut the pepper and remove the seeds and cut the “lid” but save it to be used later. Then place the sliced peppers, together with the lids, in a pan with enough water to cover them, for about 7 minutes. After removing them from the water, leave them upside down to drain for about 5 minutes. Sprinkle salt and ground pepper inside the peppers and leave them upside down for another 5 minutes. Directions for the meat Pour a spoonful of olive oil in the pressure cooker and then add the piece of beef jerky/sun-dried meat. Seal the meat, just to change the color. Limpe-o por dentro. Em seguida, coloque os pimentões cortados, junto com as tampas, em uma panela com água suficiente para cobri-los, por cerca de 7 min. Ao retirá-los dessa panela com água, deixe-os de ponta cabeça, para escorrer a água por cerca de 5 min. Polvilhe sal e pimenta moída dentro do pimentão e deixe-os de ponta cabeça por mais 5 min. Modo de Preparo da Carne Coloque uma colher de azeite na panela de pressão e na sequência acrescente o pedaço de carne de sol. Dê uma selada na carne, apenas para mudar a cor. Acrescente água o suficiente para cobrir o pedaço de carne de sol. Quando pegar pressão, deixe por 20 min e desligue. Deixe sair a pressão. Abra a panela e coloque a carne em um recipiente e comece a desfiar. Em outra panela, coloque o sal, o azeite e a pimenta e refogue a carne desfiada. Em um recipiente, misture o leite, o creme de leite, o creme de ricota e o queijo gorgonzola, até incorporar todos esses ingredientes. Despeje essa mistura na carne desfiada e deixe cozinhar por cerca de 3 min. Desligue e encha os pimentões, deixando pelo menos um dedo de espaço, para poder encaixar as tampas. Leve ao forno pré aquecido a 180oC, por cerca de 25 min. Quando perceber que a tampa começou a ficar escura, seus pimentões devem estar no ponto. Verifique. Retire-os do forno e coloque em um prato para servi-los. Observações Você pode usar outros tipos de carne. Lembre-se apenas de usar uma carne que possa ser desfiada. Isso é muito importante! Se quiser, pode polvilhar queijo parmesão dentro do pimentão, antes de enchê-locom a carne de sol. 50 Mashed Pumpkin with Blue Cheese (Purê de Abóbora com Gorgonzola) Ingredients 1 piece of pumpkin of your choice (about 12.5oz, if it has a skin, 12oz, without skin) 2 tbsp gorgonzola cheese 1 tbsp ricotta cheese 1 tsp butter ½ tsp salt Parmesan cheese and parsley for garnish Salt and pepper to taste Directions In a pressure cooker, place the piece of pumpkin and add salt, along with enough water to cover it. Leave it under pressure for 15 minutes and turn off the heat. Let the pressure go. Drain all the cooking water, transferring the pumpkin to a container. Peel and mash the pumpkin. Remove excess water and pass the pumpkin through the sieve, kneading it once more so that it is dry. In a saucepan, place the butter, salt, pepper, gorgonzola cheese and ricotta cheese. Boil and add the pumpkin batter. Stir with a wooden or silicone spoon, until this mixture starts to come off the bottom of the pan. Make sure the amount of salt you add is according to your taste. If necessary, add more. Turn off. Transfer the puree to a container. Sprinkle Parmesan cheese and garnish with parsley. Notes If you find the pumpkin already peeled, this will make your job easier. Quando pegar pressão, deixe por 15 min e desligue o fogo. Deixe a pressão sair. Com o auxílio de uma peneira, escorra toda a água do cozimento, transferindo a abóbora para um recipiente. Retire a casca e amasse a abóbora. Retire o excesso de água e passe a abóbora pela peneira, amassando-a mais uma vez para que ela fique bem sequinha. Em uma panela, coloque a manteiga, o sal, a pimenta, o queijo gorgonzola e o creme de ricota. Deixe levantar fervura e acrescente a massa de abóbora. Mexa com uma colher de pau ou de silicone, até que essa mistura comece a desgrudar do fundo da panela. Verifique se a quantidade de sal colocada está de acordo com seu paladar. Se necessário, acrescente mais. Desligue. Transfira o purê para um recipiente. Polvilhe queijo parmesão e decore com salsinha. Observações Se encontrar a abóbora já descascada, isso facilitará o seu trabalho. Todavia, se não encontrá- la, Paty sugere tirar a casca depois de cozinhá-la, mas isso fica a critério de cada um. Caso sua abóbora tenha ficado com pedacinhos, utilize uma batedeira para deixar a massa lisinha, batendo-a por cerca de 2 min. 52 Cream of Corn (Creme de Milho) Ingredients 1 can corn (drained) 1 tbsp cornstarch 10 oz whole milk 2 tbsp table cream 1 tbsp cream cheese or ricotta cheese Salt and pepper to taste Parsley to garnish Directions Blend the milk and half of the corn can in a blender, for 3 minutes. Turn off and strain. Dispose of the remains. Put the mixture in a pan and add the salt and ground pepper. Add the rest of the corn to the pan. In a plastic or glass container, put the spoon of cornstarch, adding it with the rest of the milk. Mix well until everything dissolves. Add this milk with the starch to the pan and turn on the low heat. Stir. When it starts to thicken, check the salt and add more as needed. Stir for about 3 minutes. Turn off the heat and add the table cream and cream cheese. Transfer to a ceramic (or glass) tray and use a parsley leaf to garnish. Desligue e use uma peneira para coar. Descarte o bagaço. Coloque essa mistura em uma panela e acrescente o sal e a pimenta moída. Acrescente o restante da lata de milho na panela. Em um recipiente plástico ou de vidro, coloque a colher de amido de milho e acrescente o restante do leite. Misture bem, até dissolver tudo. Junte esse leite com o amido na panela e ligue o fogo baixo. Vá mexendo. Quando começar a engrossar, verifique se está bom de sal e, se preciso, faça as correções necessárias. Mexa por cerca de 3 min. Desligue o fogo e acrescente o creme de leite e o requeijão (ou creme de ricota). Transfira para um refratário (de cerâmica ou de vidro) e coloque uma folha de salsinha para decorar. Observações É importante dissolver bem a amido no leite, para que você tenha um creme bem lisinho! Se quiser um creme com mais milho, você pode usar mais metade de uma lata. Ou para bater ou para colocar os grãos que restaram. 54 Chayote Squash Souffle (Suflê de Chuchu) Ingredients 1 egg 1 cooked and diced chayote (in salted water) 1 tbsp grated Parmesan cheese 1 tbsp flour 1 tbsp cornstarch 1 tsp salt Garlic, parsley and spring onion to taste Directions In a bowl, mash the cooked chayote and add the egg. Observações Para quem gosta de um suflê um pouco mais salgado, você pode acrescentar queijo parmesão ralado antes de levar ao forno. Pode adicionar mais queijo (muçarela ou outro de sua preferência) e mais um ovo. 55 Vegetable and Cheese Souffle (Suflê de Legumes e Queijo) Ingredients 4 eggs ½ can of table cream 1 cup of boiled vegetables 1 cup chopped diced mozzarella 2 tbsp grated Parmesan cheese ½ tsp salt Ground pepper to taste Directions Add the eggs to the mixer and mix until they have doubled in volume. Add the cream and mix for another 3 minutes. Then add salt, ground pepper and the cooked vegetables. Mix with a spoon. Add the mozzarella and mix again. Grease a baking sheet with butter. Pour the mixture and sprinkle with Parmesan. Bake in the oven at 350F for about 25 minutes. Observações Caso você perceba que sua muçarela está um pouco salgada, você pode optar por utilizar menos sal na preparação de seu prato. Os legumes também podem ser os de sua preferência. Eles só precisam estar cozidos. Caso não tenha creme de leite, você pode substituí-lo pelo creme de ricota. 56 Taboule (Tabule) Ingredients 1/2 cup of bulgur wheat 2 small skinless seeded diced tomatoes 1 small peeled seeded diced cucumber 1 tbsp olive oil Juice of 1 medium-sized lime Parsley to season and decorate Salt and pepper to taste Mint leaves to taste (optional) Directions Leave the wheat soaking for at least 2 hours in a container. Adicione o azeite e o suco de limão e misture tudo, delicadamente e deixe descansar por cerca de 1 hora antes de servir, para que o tempero possa ficar acentuado. Se desejar, acrescente também algumas folhinhas de hortelã picadas a essa mistura. Observações Se quiser incrementar seu tabule, você pode colocar azeitona verde. Fica uma delícia! 57 Marinated Tomatoes with Balsamic Vinegar (Tomates Marinados no Vinagre Balsâmico) Ingredients 2 lbs Italian seedless tomato, cut into 4 5 oz balsamic vinegar 1 oz olive oil 3 garlic cloves, peeled (small) [if large, use only 2] 7 fresh basil leaves Oregano and salt to taste Directions Wash the tomatoes and dry them with paper towels. Cut all the tops, chopping them vertically, so that each one has 4 parts. Put them aside. In a large, deep bowl, mix all the ingredients and, little by little, add the tomatoes, to incorporate them with the mixture. Put aside for about 6 hours before serving. Notes If you don’t have fresh basil you can use dry basil instead. It is important to remember that this tomato, when marinated in the balsamic vinegar, gets an increasingly accentuated flavor. Therefore, if you are not a big fan of acidic things, the recommendation is to make a smaller amount, for immediate consumption. Or, if you want to make more than the recipe, double the ingredients to make as much as you want. This recipe will always remind Paty of the vacation she took with her parents from São Paulo to Uruguay! They ate this salad in an Italian all-you- can-eat restaurant in the south of Brazil and she loved it! They only left the place when the manager brought her the recipe!
